I love recipes! They are so important to our culture and our family history. They tell stories about time periods and connect people to one another from one generation to the next.

Mrs. Traughber's Favorites

Cilantro-Lime Chicken Enchilada
Ingredients:
2 cups shredded chicken
2 avocados diced
couple cilantro leaves, chopped
1/4 c sour cream
1/4 c lime juice
1 tsp. cumin
salt and pepper
12 tortilla shells
1 10oz. can green chili enchilada sauce
1-1/2 c. shredded cheese

Ingredients:

  1. Preheat oven to 350 degrees and lightly grease a 9/13 glass baking dish with non-stick cooking spray
  2. In a mixing bowl, combine the shredded chicken, diced acocado, cilantro, sour cream, lime juice, cuim salt and pepper
  3. Spoon the mixture evenly onto the 12 tortillas. Roll, place seam side down, and fit snugly into the baking dish
  4. Pour the enchilada sauce over the top. Sprinkle the shredded cheese over the top
  5. Bake in preheated over for 25 minutes or until cheese has melted and sauce is bubbly
I found this recipe on Pinterest but I changed it to add more butter. I thought it was too dry without the correct. It's so simple, quick and delicious. I hope you and yours enjoy.
  Lazy Cake Cookies

Ingredients:
1 box white or yellow cake mix
2 eggs, beaten
5 T. melted butter
2 cups chocolate chips

Instructions:
Mix ingredients togethers and bake in a 9x13 greased glass pan for 20 minutes at 350 degrees

I have to give some credit because this next recipe is from my mother-in-law. It's the best salsa ever. It's fresh and so delicious!

Salsa
Ingredients:
1 16oz. can whole peeled tomatoes 
1 medium white onion, peeled & quartered
1 medium green pepper, seeds removed
1 bushel of cilantro (add more or less for personal preference)
5-6 slices of jarred jalapeƱos (add more or less for personal preference) 
4-5 cloves of garlic (add more or less for personal preference)

Directions:
Add all ingredients to blender or food processor and blend until smooth
