Mrs. Traughber's Favorites
Cilantro-Lime Chicken Enchilada
Ingredients:
2 cups shredded chicken
2 avocados diced
couple cilantro leaves, chopped
1/4 c sour cream
1/4 c lime juice
1 tsp. cumin
salt and pepper
12 tortilla shells
1 10oz. can green chili enchilada sauce
1-1/2 c. shredded cheese
Ingredients:
- Preheat oven to 350 degrees and lightly grease a 9/13 glass baking dish with non-stick cooking spray
- In a mixing bowl, combine the shredded chicken, diced acocado, cilantro, sour cream, lime juice, cuim salt and pepper
- Spoon the mixture evenly onto the 12 tortillas. Roll, place seam side down, and fit snugly into the baking dish
- Pour the enchilada sauce over the top. Sprinkle the shredded cheese over the top
- Bake in preheated over for 25 minutes or until cheese has melted and sauce is bubbly
Lazy Cake Cookies
Ingredients:
1 box white or yellow cake mix
2 eggs, beaten
5 T. melted butter
2 cups chocolate chips
Instructions:
Mix ingredients togethers and bake in a 9x13 greased glass pan for 20 minutes at 350 degrees
I have to give some credit because this next recipe is from my mother-in-law. It's the best salsa ever. It's fresh and so delicious!
Salsa
Ingredients:
1 16oz. can whole peeled tomatoes
1 medium white onion, peeled & quartered
1 medium green pepper, seeds removed
1 bushel of cilantro (add more or less for personal preference)
5-6 slices of jarred jalapeños (add more or less for personal preference)
4-5 cloves of garlic (add more or less for personal preference)
Directions:
Add all ingredients to blender or food processor and blend until smooth
